You may want to check out the pricing for the brand new Finest Riviera Cancun set to open Feb. 2027.  Their website lists some non-refundable fares for this spring and they look pretty decent for an already well touted luxury family-friendly property.

I looked into May bookings, I feel that would a safer bet when it comes to the actual opening date of new resorts in Mexico  which advertise original opening dates in the early spring.  I’ve already been denied new resort stays due to delayed opening dates on other vacations and don’t want to repeat that experience.  My stay at Finest Playa Mujeres years ago when it first opened impressed me to a great degree and I have much respect for this brand of all-inclusive properties.  Like Finest Playa Mujeres, there are upgrades for families (Finest Club), and adults-only room sections (Excellence Club).  Booking for one person in an Excellence Club Swim-Up Suite looks like it would be around $1,650 for one person for 4 nights, not bad really for a luxury resort of this caliber.
